How to make Saag

"Saag" is a popular North Indian dish that is made with leafy greens, such as spinach or mustard greens. It's a healthy and nutritious dish that is packed with vitamins and minerals. Here's a simple recipe for saag:

Ingredients:

  • 2 lbs of spinach or mustard greens (fresh or frozen)
  • 1 onion, chopped
  • 2-3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2-3 green chilies, chopped
  • 2 tablespoons of ghee or vegetable oil
  • 1 teaspoon of cumin seeds
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of coriander powder
  • Salt and pepper to taste
  • 1 tablespoon of lemon juice

Instructions:

  1. If using fresh greens, wash and chop them finely. If using frozen greens, thaw them before cooking.

  2. In a large pot, bring 4-5 cups of water to a boil. Add the greens and let them cook for 5-7 minutes, or until they are wilted and tender. Drain the greens and set them aside.

  3. In a pan, heat the ghee or oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

  4. Add the chopped onion, garlic, ginger, and green chilies to the pan. Saute for 3-4 minutes, or until the onion is soft and translucent.

  5. Add the turmeric powder, coriander powder, salt, and pepper to the pan. Mix well.

  6. Add the cooked greens to the pan and mix everything together. Use an immersion blender or a regular blender to blend the mixture to a smooth consistency.

  7. Add the lemon juice to the saag and mix well.

  8. Serve hot with steamed rice, naan, or roti.

That's it! Your saag is ready to be enjoyed. You can adjust the spice level according to your taste by adding more or less green chilies. You can also add cream or paneer to the saag for a richer flavor. Enjoy!
