How to make Ghevar OR Gheejrala
"Ghevar" is a traditional Rajasthani dessert that is prepared during festivals and special occasions. It is also known as "Gheejhla" or "Gheejrala" in some regions. Here is a recipe for Ghevar:
Ingredients:
1 cup of all-purpose flour
1/4 cup of ghee
1/4 cup of cold water
1/4 cup of milk
1/2 cup of sugar
1/2 cup of water
A pinch of saffron
Oil or ghee for frying
Instructions:
In a mixing bowl, combine the all-purpose flour, ghee, and cold water. Mix until a smooth batter is formed.
Add the milk to the batter and mix well to form a thin consistency batter.
In a separate saucepan, combine the sugar, water, and saffron. Heat the mixture over medium heat, stirring continuously until the sugar dissolves. Once the sugar dissolves, turn off the heat and let the syrup cool.
Heat the oil or ghee in a deep frying pan or wok. Once the oil is hot, pour the batter into the oil in a circular motion to form a disc shape. The center of the disc should be left hollow.
Fry the disc on low to medium heat until it turns golden brown in color. Take it out with a slotted spoon and place it on a plate.
Repeat the process with the remaining batter.
Pour the cooled sugar syrup over the fried discs and let it soak for a few minutes.
Garnish the Ghevar with chopped nuts and serve.
