Chicken biryani is a popular South Asian dish that consists of fragrant rice cooked with marinated chicken, spices, and sometimes vegetables. Here's a recipe for chicken biryani:
Ingredients:
- 2 cups basmati rice
- 2 lbs bone-in chicken, cut into pieces
- 1 cup yogurt
- 2 tbsp ginger paste
- 2 tbsp garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala
- Salt to taste
- 2 large onions, sliced thinly
- 4 tbsp ghee or oil
- 4 green cardamom pods
- 4 cloves
- 2 cinnamon sticks
- 2 bay leaves
- 1 cup warm milk
- A pinch of saffron (optional)
- Fried onions and chopped cilantro for garnish
Instructions:
Rinse the rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
In a bowl, mix together the chicken, yogurt, ginger paste, garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Marinate for at least 30 minutes.
Heat the ghee or oil in a large pot over medium heat. Add the onions and cook until golden brown, stirring occasionally.
Add the cardamom pods, cloves, cinnamon sticks, and bay leaves to the pot and stir for a minute.
Add the marinated chicken to the pot and cook until browned, stirring occasionally.
Drain the soaked rice and add it to the pot with the chicken. Add enough water to cover the rice by about 1 inch. Bring to a boil, then reduce the heat to low and cover the pot.
In a small bowl, mix together the warm milk and saffron (if using). Pour the mixture over the rice.
Cover the pot and cook until the rice is tender and the chicken is cooked through, about 20-25 minutes.
Let the biryani rest for 10 minutes before fluffing the rice with a fork. Garnish with fried onions and chopped cilantro before serving.
